About the Book
In 1997, I received my bachelor’s degree in secondary education and history from Salve Regina University. At the time, I had no idea my research skills would someday help educate others on the importance of food intolerance. Over the past three years, I have diligently researched the ever changing world of food sensitivities to help nourish my three children. When we discovered our 7 year old son Noah could no longer eat the protein found in all grains, our family restructure its eating habits. Even small amounts of gluten are harmful to him and others suffering from gluten intolerance.
