"My earlier experiences with cooking Pakistani food were unsuccessful. The recipes I had been using from different cookbooks tended to be complicated and demanding. If I followed them, I would get exhausted making just one meal; if I simplified and adlibbed my way through, sometimes I would end up with an inedible meal. Abbu has an approach to cooking which after I learned, I wanted to share with others. From him, I learned that Pakistani cooking can be easy and delicious. His meals -- tahri, masoor dal, mixed vegetable curry, cumin potato fries, meat stews, channa ki dal, kicheri -- are the kinds of meals you can make simply and eat satisfyingly everyday."
